French beans, enoki mushrooms, kanimi & tau kwa stir-fry

Dinner is french beans and enoki mushrooms, stir-fried with velveted kanimi and tau kwa. Sounds rojak?

Read that crab meat has lower dietary cholesterol than shrimps. A 3oz (about 85g) serving of crab meat or shrimps does not contain any saturated fats. I'm cooking a 128g pack for 2 + 1 toddler. Safe.

In the velveting craze, I velveted the kanimi and tau kwa. Haa... By the way, egg white for the velvet coat contains no cholesterol.

Don't be mistaken. These are real crab meat, not imitation crabsticks. When Kirin was hot, sticky, exhausted and famished at a volunteer event back in his university days, he was offered a homemade kanimi sandwich by a fellow volunteer resting beside him during a short break. And he became a big fan of it. Guessed the feeling was a little like having the 黯然消魂饭 in the Hong Kong movie 食神 starring Stephen Chow or like having my 消魂 pan (commonly known as milk pan from Provence). Kirin loves kanimi.

The recipe is similar to my asparagus & chicken stir-fry. I simply replaced the chicken with tau kwa and kanimi, used french beans instead of asparagus and added 50g of golden enoki mushrooms. Stir-fries are great for clearing your stash of ingredients in the fridge.

小雨 says "Mmmm..." as she spoons dinner of steamed white rice and my rojak into her mouth.. Bliss.

Finally, she's adjusting to the school time schedule, sleeping earlier these days around 10pm.
